CV + CV :: Bar Cart

Over the weekend I went to my favorite antiques and primitives shop in Arlington. It is truly a gem.

We’ve been looking for the perfect coffee table and I thought this would be just the place. It is definitely the right place – but we didn’t end up with a table this time.

We already had these Pantone glasses from Anthropologie (they don’t have them anymore, but these are a super fun alternative!)Poppin Bottles All the bottles fit perfectly on the bottom shelf because it was slightly bigger than the top. Word of advice, if I may. We had a smaller bar cart previously but it didn’t have a lip on the edge and I was always so worried the glasses and bottles would fall off. Hello again!

Yesterday when I talked about this weather making me nostalgic for when I first fell in love with my husband, it reminded me of something and I’ve decided to share!

The day we go married was the best day ever (I know, I just said it was our last day in Spain but I changed my mind).

It was a mild Saturday morning in June when we woke on the day of our wedding. I was so full of joy and excitement I could barely contain myself! We made our way to the venue, 809 at Vickery, to set up. Our vision was “Desert Sunset”. My bridesmaid’s dresses really set the scene. Los Vallejos Blog // Wedding World

So soft and precious. Each dress was a different style… from strapless, to backless and high-waisted to romper! Yes, ROMPER! One of my bridesmaids also doubled as my photographer so she didn’t want to wear a dress while she was doin’ her thang. Each girl got to choose their style and the fabric was called Horizon. Whitney Deal, the designer, is seriously the best. She sent a precious card with each dress personalized to each maid. It’s all in the details!

Our men were dressed in similar hues with homemade boutonnieres by yours truly.  We had such a fun group of guys and they all had signature looks. For their groomsmen gifts, we gave them monogrammed bow ties. Love!

We spent the whole year before our wedding collecting 250 mismatched plates. It was so fun! We’ve kept our favorites and they’re now on our dining room table. Its a very sweet reminder of our special day.

There were so many family touches to our special day. I am incredibly thankful to have and hold these memories forever.

The best wedding gift we received was from one of the best up and coming cinematographers. Chris Verner, presented us with a fabulous stop motion video of our whole day. What a sweet surprise!

With each new season comes new trends and quirks. New little treasures to place around the house and quirky outfits that make you smile. I can say wholeheartedly that fall is my favorite season. It’s when the leaves turn amber shades, when family comes together and on a personal note, it always makes me nostalgic for when I fell in love with my husband.

This year, my favorite trend is anything fox related.

I love their pouffy little tails, the orangey color of their fur and the little heart shaped noses. I just love all the things! I’ve picked out some of my favorites for this season.

CV + CV :: Birds of a Feather // Spanish Adventure

Hola bonitas!

Today I want to introduce you to “we”. There were seven of us enjoying this journey together and I want to give you a little background on them.

During this trip we were put into three categories by the ever-clever Papa Vallejo.

Of course you have Claudio and Carah, we are the Love Birds.
Then Husband C’s parents, Claudio Sr. and Margarita are the Middle Birds.
Last, but most definitely not least…we have the Old Birds. Grandpa Lee, Grandma Juana and Tia Juanita.

Grandpa Lee is from Malta and is very keen on all the history. The Knights of Malta were actually from Spain and there is bit of Maltan influence in Madrid. He loved to point it out each time he caught a glimpse. Which was normally followed by his signature phase of “By Joe Blimey!” In what was, undoubtedly, the most precious British accent you’ve ever heard.

Grandma Juana took care of Lee and made sure he had everything he needed. (A lot of coffee and a shoulder to lean on, most of the time) She is a nurturing soul and her love for her husband is ever beaming. It was a beautiful example for us young Love Birds.

Tia Juanita gave us so many giggles! She has a laugh-at-yourself sense of humor and a vivacious personality. Her style was precious with little high-heeled booties all week and bright, flowy outfits.

Each day started with coffee and breakfast. There is a Cafe & Te on almost every corner so it’s not too difficult to grab a bite to eat. I prefer a café con leche and a mini bocadilla de jamón, myself!

First stop is the royal palace, Palacio Royale , and cathedral, Santa María la Real de La Almudena. The palace was similar to Versalles in France. A grand structure with many rooms all dedicated to a different ritual. The best room was probably the “Royal Dressing Room”….a huge room literally dedicated to getting ready in the morning. Sign me up!

We weren’t allowed to take photos inside the palace, but we snapped some at the cathedral. Both structures were breathtaking on the inside and out. I’m still in awe of the sheer fact that they exist.

We left the cathedral and made our way around the city, I believe mosey would be the right word here. Finding little trinkets and precious buildings along the way.

I’d like to take a moment and offer a travelers tip. The weather in Madrid is mild and chilly in the morning and then quite warm in the afternoon and back to brisk in the evening. I recommend a scarf and a maxi skirt. The scarf can be worn around your neck in the morning and then to shield your face from harmful rays in the afternoon. My maxi skirt was the best! It kept be warm in the morning but it was very breathable in the afternoons. Last, go with light jewelry. You don’t want a heavy bauble necklace weighing you down or big earrings getting caught in the wind. Here’s an easy hairdo that looks great and keeps your hair off the neck when it gets warm.

Life in Madrid was perfect. Completely unimaginable. I would go back in a heartbeat. My favorite day is coming up soon. So many beautiful pictures. I will let most of them speak for themselves, so look out later this week for a photo-heavy post full of images dripping with beauty. I hope as you view them, you let them take you away to paradise…even if for a moment.

CV + CV :: Tuna Ceviche // Home How To

One of my favorite dishes growing up was Ceviche (Seh-vee-che). This was the perfect summer food. Growing up in a (large) Mexican family meant we were getting together for “Carne Asada” (literally, Grilled Meat) every weekend.

SIDE NOTE: Carne Asada, is a term that most hispanic families use nowadays to mean a “Cook Out”. It’s similar to how Americans use the word “Barbecue”. I can invite you to a “barbecue”, but it doesn’t necessarily mean that we’ll be cooking barbecue. Hope that makes sense. Consider that your first lesson in “Mexican 101”.

Alright back to the topic at hand. Ceviche is a seafood dish that is popular in the coastal regions of the Americas. There are tons of ways to make ceviche, but typically it’s made with raw fish marinated in citrus juices (usually lime) and spiced with chili peppers. Oftentimes you’ll see ceviche under the “Appetizer” section of a menu at a Mexican restaurant, however, it also makes a great snack and meal. Best of all, it’s an extremely healthy dish.

Today, I’ll be teaching you guys how to make ceviche like my mother used to make. I want to re-iterate how many different ways one can make ceviche, so I would encourage you to put your own spin on it and use ingredients that sound appealing to you!

Our ceviche will be Tuna-based. Other common seafood that’s used to make ceviche is: crab, octopus (yes, and it’s delicious), shrimp, and tilapia.

Now for the ingredients. Here’s what you’ll need:

  • 8 cans (2 lbs) of Tuna (you can use more or less, depending on how many servings you’d like to make. 6 cans will typically make 5-6 servings)
  • 1/2 cup chopped tomatoes
  • 1/2 cup finely chopped onion
  • 1/2 cucumber, peeled and finely diced
  • 1 cup lime juice
  • 2 teaspoons of salt
  • 1/2 cup of chopped, fresh cilantro leaves
  • Tostadas/saltines (whichever you prefer!)
  • Optional Ingredients: avocado, chili peppers.

Alright, so let’s get to the nitty-gritty.

Put the tuna inside a medium-large bowl and pour the lime juice over the fish and mix gently to combine fish/lime juice.

SIDE NOTE: If you’re using raw fish, you’ll want to let it sit inside the refrigerator for 15-20 minutes after you’ve combined it with lime. This allows the lime juices to “cook” the fish. The citric acid in lime does indeed alter the structure of proteins in the fish, but does not kill bacteria. So always use the freshest and cleanest fish!

Add the onion, tomato, cucumber, cilantro and salt. Mix gently to combine all ingredients. Once you’re done, VOILA! You’ve just made your very own ceviche!

Serve on tostadas or eat with saltines. These make a great meal on tostadas, however if you’re anything like my wife and love to entertain, you can serve these on saltines for your “ladies eating small portions of food” parties. Or, if you’re lazy like I am, you can use the saltines and eat the Ceviche out of the bowl (shhh… don’t tell CV2!)

When we started planning our wedding last year we went through a lot of ideas but nothing stuck out like succulents and cacti. There is something so refreshing about the soft colors and thick, juicy leaves. So, once we decided to go with succulents we started looking at our options.

Turns out the best option was to purchase ALL the plants for the wedding about 2 months in advance. With that being said, we made sure we knew how to take care of them before we dove in head first. My mom was a huge help and went through the process with us. Shout out!

Since we had a plethora of these lush and prickly beauties left over after we said, “I do”, they became the take home gifts! (Along with some super cute mexican candy bags)

We have had a lot of family and friends asking us, “How do you take care of these guys?” Luckily, it’s pretty easy. So, here ya go!

Depending on what your babies are planted in, there are a couple of different ways to take care of them.  Let’s start with the classic terra-cotta pot (or any pot with an opening at the bottom).

Like cacti, succulents don’t need to be watered as much as normal plants. Their thick foliage holds in a lot of moisture. So what needs the water the most are the roots. This is where these openings at the bottom of each pot come into play. See that plate under those pots?

That is what I like to call the ‘plato de agua’. Since the roots are what need the water, just fill the plate up with agua and let the green machines soak it up! It’s that easy. How often should you do this? It’s different for each plant, but a good rule of thumb is when the soil feels dry.

Now, I love to plant my succulents in all sorts of objects: candy dishes, mugs, vases…basically anything I can slide these little beauties into.

Recently, I picked up a gorgeous blooming succulent that I just could not live without. I had a precious candy dish in robins egg blue just screaming for some lovin’!

Now, this dish obviously doesn’t have an opening at the bottom…it wasn’t made for plants. But that never stopped me and it shouldn’t stop you either! The possibilities are sky high.

The care process for these is a little different, but not difficult. Since you cannot get to the roots at the bottom you just have to water it from the top. This means you must get the soil pretty damp to penetrate all the way town. Only do this when the soil is TOTALLY dried out. If you feel like the soil on the top is getting a little too dry but the bottom is still damp, you can mist the plant with water.

Misting with water is a great thing to do with both kinds of platers! Plus, the way the water glistens on the juicy leaves is just inspiring.

As a bonus, I’ll show you how to transplant these sweet babies.

Start by putting some small pebbles at the bottom of your pots. This helps with filtration.

Easily take the plant out of its original planter. You’ll have to tug on the greenery a little bit, but try to be gentle.

Before placing the plant into its new home, break up the roots a little bit with your fingers. This will allow the roots at the bottom to be exposed.

Try not to leave them in direct sunlight all day, they may be a desert plant but they’ve taken quite nicely to our Western AC way of living. Moderate sunlight in the summer time is ideal.

Succulents are booming right now. They’re everywhere! I’ve seen them at weddings (including my own), as centerpieces, as gifts and even as art! A common misconception about these little lush lovies is that they are to be treated like cacti. But truth be told… all cacti are succulents but not all succulents are cacti!
